Namaste! 🙏 Welcome to my kitchen. Today, I am sharing the ultimate recipe for traditional Rajasthani Style Rabdi Malpua. These are rich, soft, yet delightfully lacey pancakes made with reduced milk (Rabdi), flavored with aromatic cardamom and fennel, fried to perfection in pure Desi Ghee, and soaked in a warm saffron sugar syrup. A royal festive treat that melts in your mouth!

Boil the full cream milk in a heavy-bottomed Kadhai and simmer on low heat until it reduces to half its volume, forming a thin Rabdi. Allow it to cool completely.
In a mixing bowl, combine the cooled Rabdi and maida. Whisk gently to make a smooth, lump-free batter of pouring consistency. Mix in the crushed fennel seeds and cardamom powder. Let the batter rest for 20 to 30 minutes.
To prepare the sugar syrup (Chashni), combine sugar, water, and saffron strands in a pan. Boil for 5-7 minutes until it becomes sticky (half-string consistency). Keep it warm.
Heat pure Desi Ghee in a flat-bottomed pan or Kadhai over medium-low heat.
Pour a small ladleful of the batter into the hot ghee. Do not spread it with the ladle; it will naturally spread into a perfect circle.
Fry on medium heat until the edges turn golden-brown and crispy. Carefully flip and cook the other side for a minute.
Drain the excess ghee using a slotted spatula and immediately submerge the hot Malpua into the warm saffron sugar syrup for 2 minutes.
Remove from the syrup, garnish with slivered pistachios and almonds, and serve warm with a dollop of fresh Rabdi!

This happens if the sugar syrup (Chashni) is too thick (beyond one-string consistency) or if the Malpuas are fried on high heat. Ensure the syrup is just sticky and warm, and fry the batter on medium-low heat.
