Sift the all-purpose flour (maida), gram flour (besan), and baking soda together using a fine sieve into a large mixing bowl.
Add the powdered sugar and cardamom powder to the sifted flour mixture and mix well.
Gradually add ghee, a little at a time, and gently combine the ingredients with light hands to form a soft, smooth dough. Do not over-knead. Cover the dough and let it rest for 30 minutes.
While the dough is resting, prepare your homemade oven. Place a heavy-bottomed kadai on the stove, spread a layer of salt at the bottom, and place a wire stand in the center. Cover with a tight lid and preheat on low heat for 10 minutes.
Divide the rested dough into small, equal-sized portions. Roll them into smooth balls and flatten them gently between your palms to shape the biscuits. Press a few chironji seeds on top of each biscuit for decoration.
Grease a steel plate or baking tin with a little ghee. Arrange the shaped biscuits on the plate, leaving some space between them as they will expand while baking.
Carefully place the plate on the stand inside the preheated kadai. Cover tightly with a deep lid or vessel to trap the heat.
Bake on low heat for 20 to 25 minutes. Check occasionally to ensure they do not burn. Once they turn light golden and look crispy, carefully remove the plate.
Let the biscuits cool completely on a wire rack. They will become crispier as they cool. Store in an airtight container.
