That's exactly when Rajasthani Besan Gatte Ki Sabzi comes to the rescue. This classic dish from Rajasthan is loved for its rich, spicy yogurt-based gravy and soft gram flour dumplings known as gatte. It's simple, satisfying, and made with ingredients that are usually available in every Indian kitchen. Many people struggle with making gatte that turn out too hard or fall apart while cooking. If you've faced the same problem, don't worry. In this recipe, I'll share a few simple tips that help create perfectly soft, melt-in-the-mouth gatte every single time.

In a large mixing bowl, combine gram flour, carom seeds, turmeric powder, red chili powder, coriander powder, salt, yogurt, and oil. Mix everything well until the oil is evenly incorporated into the flour. Now add warm water little by little and knead it into a smooth dough. The dough should be firm yet pliable—not too soft and not too stiff. Divide the dough into 4–5 portions and roll each portion into long cylindrical logs.
Bring about 3–4 cups of water to a rolling boil in a large pot. Once the water is boiling properly, gently place the dough logs into it. Let them cook over medium-high heat for about 10–12 minutes. You'll know they're done when they start floating on the surface and small pores appear on the outside. Remove them from the water and allow them to cool slightly. Cut them into bite-sized pieces. Don't throw away the cooking water. It adds wonderful flavor and body to the gravy later.
In a bowl, whisk together the yogurt, turmeric powder, Kashmiri red chili powder, and coriander powder until smooth. Mixing the spices into the yogurt beforehand helps prevent the yogurt from curdling while cooking.
Heat oil or ghee in a pan. Add cumin seeds and asafoetida and let them crackle. If you enjoy onion and garlic, you can add finely chopped onions and ginger-garlic paste at this stage and sauté until golden. However, the traditional Rajasthani version is prepared without onion and garlic. Reduce the heat to low and pour in the yogurt mixture. Stir continuously until it starts simmering. This step is important to prevent the yogurt from splitting.
Once the masala is cooked and begins to release oil, add the reserved gatte cooking water according to your preferred gravy consistency. Bring it to a boil, then add the chopped gatte and salt to taste.
Cover and cook for 8–10 minutes so the dumplings absorb all the delicious flavors. Finish with garam masala, crushed kasuri methi, and freshly chopped coriander leaves. Your authentic Rajasthani Besan Gatte Ki Sabzi is now ready to serve.
