In a large mixing bowl, combine 200g semolina, 100g all-purpose flour, and ½ tsp salt. Mix well.
Gradually add water in small portions and knead into a very tight and firm dough. Avoid adding too much water at once to prevent the dough from becoming soft.
Cover the prepared dough with a damp cotton cloth and let it rest for 20 to 25 minutes. This allows the semolina to absorb moisture and swell properly.
After 20 minutes, uncover the dough and knead it vigorously for another 2 to 3 minutes until it becomes smooth and pliable.
