Learn how to make perfect, market-style crispy potato finger chips (French fries) at home.With this special double-fry and freezing method—developed by me, Savita Shekhawat—your finger chips will turn out incredibly crispy on the outside and perfectly soft on the inside.
Check off ingredients as you gather them.
Wash and peel the potatoes, then cut them into thin, long finger shapes. Immediately place them in cold water to prevent browning.
Drain the potato fingers and spread them on a clean cotton cloth to dry completely. Ensuring they are dry prevents oil splattering during frying.
Heat oil in a pan. Fry the potato fingers in small batches for just 30 to 40 seconds (half-fry). Remove them and let them cool down completely.
Place the half-fried potato fingers in the freezer for about 30 minutes. This is the secret step to achieving that perfect market-style crispiness.
Remove the fries from the freezer and toss them with 2 tsp of corn flour until a thin, even coating forms on each finger.
Reheat the oil to high. Deep fry the coated fingers again until they turn light golden brown and crispy (takes about 1 minute). Drain on paper towels.
While still hot, transfer the fries to a bowl. Add salt, red chili powder, coriander powder, black pepper powder, and chaat masala. Toss well to coat evenly.
